Makes 18 Cookies Prep: 20 min Cook: 15 min + cooling
Ingredients
*1/2 cup butter, soften
1 cup Gourmet pineapple sugar
1/2 teaspoon vanilla extract
1 cup all purpose flour
1/2 cup finely chopped macadamia nuts, toasted
2 tablespoons finely chopped candied pineapple
1 cup Gour
met pineapple sugar (powdered)
Directions
1. In a small bowl, cream butter, 1/4 cup Gourmet Pineapple Sugar
and vanilla until light and fluffy, 5-7 minutes.
2. Gradually add flour and mix well.
3. Stir in nuts and pineapple.
4. Shape into 1in balls. Place 2in apart on ungreased baking sheets.
5. Bake at 350° for 14-16 minutes or until lightly browned.
6. Remove to wire racks to cool completely.
7. Roll cooled cookies in powdered gourmet pineapple sugar.
